1 1/2 c. oat flour
1 1/2 c. brown rice flour
1 tsp. baking soda
2 tsp. baking powder
1 1/4 tsp. garlic powder (or granulated garlic)
1 c. shredded low-fat cheddar cheese
1/4 c. extra-virgin olive oil
1/2 c. water
Preheat oven to 450 degrees. Combine all ingredients together (reserving 1/2 cup cheddar cheese to use later as topping) and mix thoroughly until a dough forms. Roll the dough out on a lightly floured surface. Separate pieces and form sticks (about 3” long and 1/2” in diameter). Place on an ungreased cookie sheet (they can be rather close together as they don’t grown much while cooking). Sprinkle the remaining cheddar cheese on top of the fries. Bake 20-25 minutes or until the cheese is lightly brown. Remove from the oven and let cool completely on a wire rack. Store in a airtight container in the refrigerator.
